Another day in paradise.... As someone just told me, I am living the life of retirement and I guess that's true, at least for the moment.

After breakfast, I did some CEU study. Once that was done, we walked to the beach and stayed for about an hour, hour and a half. We saw more whales. This one looked like a baby-small in size, so an assumption on my part. It never gets boring watching them play and jump out of the water, only to make a big splash when they land. Kind of the equivalent to us doing a cannonball in the pool. There were surfers out riding the waves. Some are better than other and one in particular knew exactly the type of waves he was looking for.



On the way back to the condo we stopped by one of the pools so I could get some parsley for lunch. Lunch today was Flatbread with Bacon and Scallion Pesto. I baked some pizza dough by itself in the oven (drizzled with a little olive oil), cooked up some diced bacon, and then cooked some sliced onions in the bacon grease. The scallion pesto was made with green onions, parsley, lemon peel and lemon juice whooshed up in a food processor with olive oil added when the particles were finely chopped. Salt and pepper to taste and you are done. Once the pizza dough is baked, smear it with sour cream that you have added a little lemon zest to, scatter the bacon and onions, then dot the surface with the scallion pesto. I was not sure what to expect, but it turned out great. The pesto had a very strong taste, but paired with everything else, it was great! Another yum!


More continuing ed in the afternoon, a little Food Network, some reading and it was dinner time. Tonight we had Balsamic-marinated Pork Loin Cops, Baked Rice and Green Beans with Creme Fraiche. I had to walk back to the pool for more herbs-tarragon, rosemary and parsley. It is so cool to be able to pick the herbs as you need them and have them fresh when you use them! The pork had a Lemon-Honey Sauce (with rosemary) which turned out nicely. I have finally learned that the secret to a good sauce is a little skillful neglect on the cook's part. When a sauce needs to reduce, put it on the stove on a high heat and walk away. That's not to say you don't keep an eye on it, but it rarely needs stirring, it just takes time to reduce. For dessert I had put together a Napolean of sorts using some puff pastry disks I had baked the other day, layered with Mascarpone Cream and blueberries. That also turned out well. I like working with ingredients you already have and being able to put something good together. Thank you, Cook Street!


I talked with Jordan, showered and will read before bed. A very quiet day indeed.

Up at 7am with a breakfast of coffee and an Oatmeal Raisin muffin. I worked on CEUs for nursing relicensure this morning. I have 2 hours down and only 28 more to go, lol. I figure if I work on it a little each day, I'll be fine. My license renews in April.

I received a call from Carson Tahoe saying they found another nurse to fill their weekend slot, so I won't be getting that job. At least they called me! I wasn't left "hanging".

After the "strenuous" mental work out, we went to the pool for an hour and a half. I have color! It did rain off and on today but we had nice weather for the pool. After the pool, lunch time!

Since there was no lamb for meatballs, we went with beef and I switched out the mint for cilantro. Both pool areas have fresh herbs growing in barrels, so it is great to walk to the pool and just pick fresh herbs as I need them. One of the advantages of paradise! We had local island kale (from the store) that I blanched in water. We then wrapped the kale around the meatballs, dolmades style (Greek grape leaves filled with meat). Pretty tasty, actually.



A lazy afternoon of reading, then dinner. I made Seared Duck Breast with sautéed artichoke hearts, shallots and garlic. The duck was also served with a balsamic reduction. Yum! I served that with twice baked potatoes. Not as much duck fat was cooked out with searing it in a skillet, so I think that next time I'll make the duck like we did in school. The duck was seared, skin side down in a skillet, then baked off in the oven on a wire rack to keep the meat above the fat that cooked off. Much better, I think. But--you live and learn as they say. There was left over chocolate cake for dessert (cal surprise, lol). I must say, the chocolate cake was much better tonight than it was yesterday. Note to self: Most cakes seem to get better with age.



Turn in early to shower, talk to Jordan and read before bed. Another day in paradise.......

I actually made breakfast today! We had Dutch Baby Pancakes. They use a thin batter and are baked in a hot oven in a pre-heated hot pan for about ten minutes. The Dutch Babies can be served with fruit or with a squirt of lemon and dusted with powdered sugar (which I have come to learn is also called confectioners sugar and 10X). I have always liked these thin pancakes that bake up to look like large bowls-not sure why, other than they are quite tasty!

After breakfast, we went shopping for groceries for this next week. I still like the Foodland Farms store. It's small but offers a lot. It was interesting however, that they do not sell lamb. Guess it's not that big on Maui. I was going to make lamb meatballs but we bought beef instead.

By the time we got back to "The Ridge", it was time to make lunch. I also baked a chocolate cake to take with me to Sandra and John's house. Lunch was Corn and Crab Chowder. LOVE this recipe! Onions, red pepper, bacon, and celery, sautéed in a little butter. Add a Tbsp of flour, some Old Bay spice, half and half, chicken broth and some diced potatoes and simmer until the potatoes are soft. Add frozen (or fresh if you have it) corn, 12 oz of crabmeat, and continue to simmer another 5-10 minutes. Serve it up hot with some crusty bread. Yum!!

I made dark chocolate frosting after lunch. It's made by heating cream and sugar to boiling then adding some butter and unsweetened chocolate and vanilla extract and stirred until the chocolate and butter melts. The frosting needs to cool before it can be used. It was a new recipe for me but it turned out well.

We went over to Sandra and John's at 5pm. They live just up the street. They have a little 2 1/2 year old girl whose name I didn't realize until tonight is June. So her name is June Jun! She is a cutie. Half Chinese and half American. John did the cooking tonight-BBQ ribs, Panko fried chicken with a savory dipping sauce and Ginger Bean Curd Shrimp, a spinach dish and white rice. Everything tasted great! We finished with the chocolate cake and a slice of passion fruit they had picked off a tree locally on one of their walks around this area. John teaches math in middle school but the two of them would like to buy some land and have a farm. John (and I am probably not spelling it correctly) was born and raised on a farm in rural China. His parents immigrated to America (NYC to be exact) when he was 8 years old. John is the youngest of three children. Sandra was born and raised on Statin Island, so they met in New York. It is wonderful to hear John talk about what a great place America is. He has traveled all over the world and seen quite a bit. They have lived on Maui for almost four years but it has been hard making friends, they say. I think they are a little lonely. We left when it was time for June to go to bed. We had a nice evening and left with the promise of a fish dinner of fresh "gold fish" (not, apparently the little goldfish in a fishbowl but a salt water fish with whiskers!). Sounds like an adventure!

The trade winds are back. What this means is a clearing out of the vog (the volcanic debris blown in from the big island, which has an active volcano), a slightly cooling off in temperature and wind gusts up to 32 miles per hour. As I write this blog entry, I can here the wind howling around the condo buildings. If I didn't know better, I'd think there was a blizzard outside! But no, it's raining. The wooden slates on the windows rattle and the wind whistles through them. Kind of unsettling....

After breakfast, we walked to the beach. The downside of the trade winds is that when you sit on the beach, you end of getting blasted with sand when the wind gusts. Don't leave your mouth open too long, lol! We were able to do some whale watching while we were sitting there. The whales were about ten miles off shore, playing like children, in the water between Maui and Molaiki. They seem to alternate between swimming with one fin out of the water and swimming straight up head first out of the water, then a big splash as they go back under the water. What amazing creatures. I can only imagine their size. It was so cool, sitting there watching them, waiting to see where and if they would resurface.

Lunch was a Langostinos salad stuffed into little sweet peppers and served on a vinaigrette-dressed lettuce salad. It turned out better than I thought it might. I am using almost all new recipes, which is exciting although I have been accused (jokingly) of using my friend as a guinea pig. Otherwise, no complaints so far!


After lunch I baked up for tart shells for tonight's dessert using puff pastry and mixed up the marinade for tonight's steak. If I open the slats in the kitchen window, the kitchen doesn't get as hot as it usually does now that the trade winds are back. I read a little, then watched a movie on TV-"Polar Icestorm". What will they think of next?! After the movie it was time to start making dinner. I chopped the strawberries I used to top the tarts, whipped up the mascarpone cheese pastry cream for the Strawberry Mascarpone Tarts, cooked the potatoes for twice baked potatoes and readied the cherry tomatoes for Green Beans and Tomatoes with Carmelized Garlic. Everything was ready in about an hour and dinner was served! The marinade was a coffee-cinnamon base, quite unusual. Cinnamon is not a spice you would normally associate with beef. Part of the marinade was reserved for a dipping sauce (after adding sherry and sliced green onions) and while the marinade added a nice flavor to the meat, I was not so sure I liked the dipping sauce. I was glad I tried it though.



I talked with Jordan after dinner, then readied myself for bed. The wind is keeping me up, but I'll get used to it. Tomorrow will be filled with shopping for the week coming up as well as more cooking. We are invited over for dinner to John and Sandra's house tomorrow evening. John apparently does most of the cooking but is nervous cooking for a "chef". I told them not to worry-anytime someone cooks for me I am happy! Besides, John cooks a lot of Chinese food (learned while growing up) so it should be interesting.

It's the end of January! Already!! Time goes quickly, that's for sure.

Today was not really a work day....breakfast was coffee and a muffin. With the computer problems I have had, I had to redo my blog (my examiner article had to be done twice because my computer froze and I had to shut it down). we did walk down to John and Sandra's condo. We met them the last time I was here. They are a young married couple who have one little girl (we call her "the princess"). We took them some cookies and the rest of the "Crack Pie". Sandra says they want to have us over for dinner-nice, nice young couple.

I got my hair cut at the Ritz Carlton today. And when you take advantage of any spa services, you get all day access to all of the spa facilities. My haircut was at 12:30pm so I went over about 10:30am to see what they offered. I spent time in the jacuzzi and the steam room. They also have what they call the "relaxation room"--chaise lounges and chairs with blankets and soft music playing. There is lemony cucumber water, tea and candied nuts, as well as apples and oranges to eat. All very soothing.... I met a woman in the relaxation room who is a nurse practitioner married to a physician. They were at the Ritz for a medical conference. We had a very pleasant conversation about nursing and medicine and children (hers). At 12:30pm on the dot, Irma came and got me for my haircut. I have been going to the same hairdresser for years now, so it was time for a fresh pair of eyes to see what might be done with my hair. It was all very pleasant.

The afternoon seemed to go quickly (especially with a nap) and soon it was time to get ready for dinner at the Banyon Tree at the Ritz Carlton up the street.

We sat at Robert's station (remember, he's the French waiter, so it is pronounced "Rro-berr", accent on the last syllable). He is such a pleasant, friendly man and takes excellent care of everyone. We did the chef's tasting menu, which changes every month. There were also a few changes to their regular menu with the new year. Got to stay fresh and current to keep people engaged!

I had seared Foie Gras, a Seared Scallop with Egg Custard (that is actually served in an egg shell!) and a kale chip, Kobe Skirt Steak with an awesome dipping sauce served with Haricot Vert and for dessert- a financier (little almond cake) and POPCORN ice cream. I have GOT to find a recipe for popcorn ice cream, or, as my friend suggested, see if I can come back to the restaurant kitchen and ask them to teach me how to make it! It was absolutely divine!!

When I have the chance to eat so well, it's almost as if I died and went to heaven! It reminds me of that scene in Julie and Julia when Julia Child and her husband first arrive in Paris and go out to dinner. The food is so divine, Julia is speachless, she simply cannot find the words to describe the food and how wonderful it tastes to her. Her husband, Paul, says,"Yes, yes, I understand". I totally get that!!

The Ritz Carlton is built back from the ocean front. Apparently when they first started construction, years ago, they found an ancient burial grounds and so could not finish construction. The Ritz decided to just move the hotel back several hundred feet and started building again in a different location. The Banyon Tree looks out over the ocean. I'd forgotten that if you look out and watch the water long enough, you can see whales breaking the surface of the water. It's SO cool! And sure enough, there were whales tonight, just like e other morning at the beach. If nothing else, you can see them spout water when they surface, even if the whales don't come out of the water.

But tomorrow I begin to cook again, which for me, is not really work.

I was up early this morning and after a "first breakfast" (as the Hobbits call it) of coffee and an Oatmeal Raisin muffin, I wrote an article for Examiner.com. The article was on ideas for food for your Super Bowl party. Super Bowl is less than two weeks away and was one of the ideas that the staff at Examiner.com sent out. They are always trying to encourage their writers with ideas and promotions to help motivate the writers to write.

About mid-morning, it was time for "second breakfast"! I made "A Hole in One". (Sorry, no picture!) You take a piece of bread, cut a hole in the middle (I used a glass and it worked just fine), butter both sides of the bread then lay it in a hot skillet to toast. Once the first side is toasted, flip it over gently then break an egg into the center of the hole you made. The egg then cooks in the toast while the second side of the bread is toasting. You can cover the skillet with a lid to speed up the cooking of the egg. Pretty cool, actually. What happens to the bread round you removed, you ask? It gets toasted in the skillet, too, as an "extra" piece of toast.

About 11am we headed over to the pool to sit poolside for about an hour. My tan is coming back nicely, thank you very much! There is such a variety of hibiscus around the pool area as well as around the condo complex.




Lunch was Curried Chicken Salad, a recipe culled from Ina Garten at Food Network. She uses a tortilla wrap to make it into a sandwich, but I served it with lettuce and papaya. Poached chicken, raisin, cashews, celery, mayo, curry powder, mango chutney, salt and pepper. Easy yet tasty!



I read most of the afternoon as well as texting my sisters. My brother was taken to the ER with chest pain. We are of the age where this could happen. That, and poor genes from both sides of the family. :-(

Dinner was Curried Langostinos (a tiny lobster tail-SO cute!) over white rice. I think today's theme must have been curry. A nod to my Mother's Indian upbringing. Dessert today was Rum Raisin ice cream with a chocolate chip cookie on the side. Easy-peasy, as they say.

A shower and some reading, then bedtime......

Another warm day with vog. Vog is like smog, but caused when the winds come out of the south and blow "volcanic ash" from the big island thru the air to the other islands. Makes the landscape look hazy, like LA smog!

We took a walk around the complex after breakfast (the proverbial morning constitutional, lol) then I came back and made chocolate chip cookies. By the time I finished the cookies, it was time for lunch. I made Sweet Potato Soup with Mascarpone and Rosemary. I am adding that to my recipe list on this blog. It was very yummy! We finished the chicken from last night also.


I talked to Michele and Janell (both sisters) in the afternoon. Before dinner I made Oatmeal Raisin Muffins. And once those were done, I made Pasta Ponzo. Curly pasta with a roasted cherry tomato and caper sauce. It turned out well. Everyone was pleased!


Otherwise, nothing new in paradise. Warm humid weather (80-82), sunny skies, slight breezes and bugs (just a few). Lots of singing birds, a few butterflies and a myriad of flowers. It's Hawaii!

I was up by 7am-late when you consider there is a two hour difference in time from here to Reno. We went for a walk to the beach after breakfast. The beach it's about a five minute walk from the condo, all downhill. The only hard part is coming back-all uphill!


Lunch was pear slices wrapped in Speck (a smokey Spanish ham) served with slices of Pecorino Romano and La Panzanella crackers. I cleaned up the kitchen, then read and did research on the web.


Dinner was Spicy Chicken on a bed of Romaine, avocado and corn, with a warm spicy vinaigrette. I had made the vinaigrette about 4pm and let it sit. That let the flavors meld together so it ended up being a great salad. I would repeat this salad again. It called for fresh cilantro, so I walked down to the pool area (for whatever reason, the complex keeps herbs in large containers in both pool areas. I managed to get into the pool area but my key would work to open the gate to let me out! Thought I might be stuck there, but used the card on the keychain to open the gate (just like in the movies, lol!). Finally got out!


Dessert was crack pie. It really is addictive, all caramelly and buttery! Time to give the rest away, lol.

I am back in Paradise.

We went grocery shopping this morning. Groceries for this week, anyway! There will be more shopping to do next week, lol. They have a store called "Farmland" in Ka'anapoli that is similar to Whole Foods but has a better gourmet selection. I really like this store. And I found Speck there!! Speck is a type of Spanish ham that is smoked. Yummy! I am going to use the Speck tomorrow to wrap around slices of pear to serve for lunch.

When we got back to the condo (which by the way is up a flight of stairs! Guess I'll be getting more exercise staying at this condo, lol.) I got groceries put away, read some emails, then made lunch. I made a Broccoli-Cheddar Frittata for lunch. Nice and light! And served it on a bed of Romaine dressed with a simple viniagrette.


After lunch I made "Crack Pie", a recipe from Momofuko's Milk Bar (momofuko meals "lucky peach in Japanese), a restaurant in NYC. It sounded kind of crazy but interesting. You make an oatmeal cookie (just spread the cookie dough on one big cookie sheet then bake it for about 15 minutes) first, let it cool, then break it apart and whooze it around in a food processor with a little sugar and salt. You add a little butter to the cookie crumbs, then press it into a pie pan. It is filled with a caramel-like cream filling made with white sugar, brown sugar, butter, egg yolks, cream and vanilla. Then you bake the pie for about 20 minutes at 350 degrees, then 325 degrees for 10-15 minutes. The pie is cooled then refrigerated to "set" the center. It is suppose to come out ooey gooey creamy. I'll let you know, lol! My crust baked up over some of the filling, don't know if that's good or bad?




Dinner tonight is Bread Crumb-Olive Crusted Fish (Ahi) with French Rice and Green Beans and Cherry Tomatoes with Caramelized Garlic. Will add a picture later.

Saturday we got up late. Jordan has been working long hours so we both needed the sleep. After breakfast (homemade yogurt, which really did turn well-strawberry flavored made in a yogurt maker by EasiYo, a New Zealand company) I started laundry then baked up the No Knead dough I put together yesterday.






Once the bread was done, I made the frosting the Gary's birthday cake. Chocolate Cream Cheese Buttercream frosting. The first batch wasn't dark enough, so after I added the crumb-coat (a thin layer of frosting spread over the outside of the cake to contain the crumbs that come off the cake when you start putting a frosting layer on it) so I added more cocoa. I did swirls on top of the cake and added cake crumbs to the sides of the cake.



I finished laundry and packed my bag, took a shower and got ready for Gary's birthday party. While I was packing, I had a plastic container of sweaters on the bed. Ah Choo decided to get into the container but made it tumble off the bed. When I turned around, he had become trapped under the container, looking for a way out! Poor kitty, lol!



At 6:15pm we headed to Kasia and Gary's house for a meal of Hamburger Stroganoff. One of Gary's favorite meals. Good meal, good friends. We left about 9pm because I couldn't stay awake any longer and we had to get up at 3:30am to get to the airport by 4:30am.

Sunday morning we were up before the alarm went off. Got dressed, ate some yogurt and Jordan took me to the airport. The flights to Maui were packed! No first class this time, I'm afraid. The trip, however, went smoothly and My friend was there to pick me up at the airport. We headed off to Costco for a few things like meat and wine. When we checked out, it turns out they almost turned us down because they said we had an old card (I had forgotten Michele lost her card and replaced it while Janell and I were visiting with my mom. They got us the new number and a new card-Michele's name, my picture, lol.

From Costco, it was back to the condo. It is a different condo than the one I was at before. The kitchen is definitely smaller and the unit is older (think 1970s, lol), but it still is nice and it's MAUI! Got to make some sacrifices, lol.

For dinner, I got to go out to Merriman's restaurant. We sat outside, on the patio (lanai, I guess they call it). Lovely meal! Fantastic wine and seafood.... We watched the sun go down and took a picture, then I texted the picture to Jordan (he had to go to chilly Boise!).


Thus begins my Maui adventures.....

It was a long night. Jordan was up most of the night working and even though he tries to be quiet, I can still hear him. Ah, well, it's only sleep!

I baked my "No Knead" bread this morning. It really is easy. 3 cups of bread flour, 1 1/2 tsp salt, 1/4 tsp yeast and 1 1/3 to 1 1/2 cups of lukewarm water. Mix it up in a medium large bowl, cover with plastic wrap and let it sit on the counter for 12-16 hours (although I sometimes leave it for 24 hours. Bake inside a covered casserole dish or Dutch oven in a 475 degree oven for 30 minutes, uncover and bake for an additional 20-30 minutes. Remove from dish, let cool on a wire rack. It's Jim Leahy's recipe. He has a bakery in New York and wrote a book on his technique. It really does turn out good bread. There are lots of "no knead" or "little knead" bread recipes but his is the best, I think.

I had lunch with Janell at Sushi Rose, went to Walmart then came home and baked three chocolate cakes (one recipe). Cakes are easier to frost if you left them sit and cool for a day. I have chocolate ganache for the inside layers and chocolate butter cream cheese frosting. I'll take a picture to post.

After Jordan finished teaching his class, we went out to dinner at Moxie's on Robb Drive. The food is not bad and they have the same waitress every night. She really nice. After such a dry spell, it started raining as we went into the restaurant and it was pouring rain when we left the restaurant! And it's still raining at 11pm. Guess that's a good thing, especially for the Pleasant Valley fire.

Gotta pack tomorrow as I leave for Maui on Sunday!

Today was kind of a lazy day. I got a call at 7am this morning from Amy, someone I used to work with while I was at SCOR. She works for Regent and is looking for an assistant. She asked me to apply for the position, so I did. It would be full time. Again, we'll see.

I also received a call from a company called Advantix. They do occupational medicine for General Motors. And as it happens, General Motors has a distribution center here in Reno. No manufacturing, just distribution. The position is what they call per diem, however, it would just be filling in for sick calls and vacations. No garunteed hours of any kind. We talked for a long time and I told her I was leaving town on Sunday for a month, so she plans on calling me when I get back in town to see what my situation is (job-wise) at that time.

Not to be too dramatic, but I have cast my net out for jobs and I'll just have to see what happens when I return, the end of February.

Dinner tonight was a beef stir fry with onions, broccoli, carrots and some cabbage in a soy-sesame sauce. I served it with white rice. It turned out well. Jordan brought home some baklava from a bakery in Carson City. It was pretty good but a little doughy. Doughy is not a word I would associate with baklava but there you have it. It was rolled instead of laid out in a sheet and cut, which could account for the doughiness (is that even a word?). It had a nice flavor, though.

Tomorrow I bake a chocolate cake!

Today was filled with errands. After breakfast and checking my emails, I dug out my sewing machine and dropped it off at SCOR for my friend Neda to use while I am in Maui. She makes purses (and does a great job) and apparently burned the motor out of her sewing machine. From SCOR it was on to St Mary's Hospital to buy an ACLS (Advanced Cardiac Life Supposrt) book. I have been out of nursing for the last year and a half and am taking an ACLS class the week I get back from Maui. I'll need all the help I can get! I bought the book from Shawn, a nurse I used to work with in the ER at St Mary's. It was like old home week! Shawn is now one of the educators at St. Mary's.

I had lunch with Ric at Arlington Gardens. In all fairness to Ric, he did ask if I wanted to go somewhere else but I said Arlington Gardens was fine-I don't usually go there. I had a roast beef sandwich with a blue cheese pine nut spread that was very tasty. Chips on the side. I did indulge in dessert, an Italian wedding cake. Yellow cake layered with raspberry jam and buttercream. Yum!

After lunch I drove down to The Grove on Foothill Rd. it's a private event. Enter that's been around about three years. They also do on and off site catering. The building it wood and stone-quite pretty, with a large bar area, great room for events like weddings, meetings and seminars and a large stone patio with a raised covered area for weddings or for lunching on the patio. Ruthie is the event salesperson and was quite helpful. She even let me see their kitchen! Jordan is looking at sites for seminars and had asked me to check it out. I was curious about it anyway. I had found The Grove while searching the web for catering prices in Reno while I was on Maui in December and trying to figure out what to charge a client for appetizer trays.

From The Grove, I went to Macy's and bought a gift certificate. I spent a little time looking around (big shoe sale!) then came home.

I checked emails again and had an email from Carolyn (the nurse who took my place at SCOR) asking if I would make 80 favor boxes filled with four cake truffles for an AORN seminar February 25. She wants red velvet and Oreo flavors. Of course I said yes. As a friend reminded me recently, caterers never say no, lol. Guess I'll be busy the week I get back!

I spent about an hour detangling the fringe on the living room throw while watching NCIS. I can't even remember how it got that way but I finally got tired of looking at it! Ah Choo loves when I sit on the couch-then I can rub his tummy. Cute cat!

I made pork chops with sweet and sour red cabbage and roasted potatoes for dinner. Jordan was late getting home, so the pork ended up a little dry from sitting too long. It was still good, though.

A little reading (I finished my mystery novel) and then bed. We'll see what tomorrow brings....

How time does fly! I leave Sunday morning for the second visit to Maui as a private chef. I will be gone four weeks this time. I won't miss the cold weather we are getting!

Monday I did some grocery shopping and ran a couple of errands, nothing exciting....

Today I cleaned, then baked Peanut Butter Blossoms with the Hershey Kisses Janell left me for that purpose. I took half the Chocolate Cake with Strawnerry Buttercream Frosting to SCOR. They were happy to see me, lol. I talked with a couple of people there, then stopped by Backstubbe Bakery to see if they would let me apprentice there. I left my card with the girls in front. Apparently Backstubbe is only half owned by Franz. He sold half of it to someone named Don. I told the girls I was willing to work for free in order to learn. We'll see what Don says (or doesn't say). After I came home, I did a little work on the LAHI project, checking student's work to see if it was done properly. Not exactly.......

I had a glass of wine with my friend, Neda (from SCOR)tonight. We went to Jungle Vino. It was nice seeing her, we don't get to get together enough.

Dinner was lasagna ala TJ's. They do a nice job on their meat lasagna, lol. Otherwise, not much to report.

Friday I did computer work and laundry, then went and had lunch with Janell at Macaroni Grille and did some grocery shopping. Otherwise a quiet day (again, lol), with dinner at home with Jordan.

Saturday cleaning and baking day. I made the Spiced Walnuts Janell had asked for- three pounds worth of nuts! Then I baked a cake-chocolate with strawberry buttercream frosting. That I baked just because I wanted it! Here's the picture-what do you think??


The layers are quite thick, so I could have split the layers in two for a total of four layers of cake, but I was concerned I would run out of frosting! Anyway, I am happy with the cake, and Jordan likes it too.

Jordan and I had dinner at La Strada at the El Dorado. I haven't been there in a very long time. Jordan had a Ceasar Salad and I had the antipasto plate (actually served on a long cutting board). Then we splt a half order of Mushroom Ravioli in a Wild Mushroom Cream Sauce and the Oven Smoked Salmon with Butter Beans and Swiss Chard. All quite good.

I didn't sleep all that well Saturday night so was tired this morning and took my time getting out of bed. Jordan made oatmeal this morning, then went off to work at UNR until afternoon. When he came back home, we took a drive to Portola so we could stop at Chalet View Lodge. He wanted to see if they still had the same chef they had nine months agao (Lizzie Parker). Looks like she might be leaving Chalet View. Too bad. We had some coffee there, took a look around, then drove back to Reno. A beautiful day! Only thing left to do is eat dinner, then go to bed!

I had an interview at Carson Tahoe Hospital yesterday for a weekend position in the OR. Trying to build up a savings account again by taking a nursing job. Things went well and I think they want to hire me but they have yet to make an offer. They have one more person to interview. The only drawback for them, is that I can't start until after February 21. Guess we'll see what happens!

I had dinner with one of my old SCOR co-workers, Jen. We went to Campo. I haven't been there since the grand opening. I walked in at 5:20pm, was greeted nicely but asked if I had a reservation. "A reservation for dinner in Reno?", I asked. And the answer was yes! According to the hostess, they have limited seating if you walk in with no reservation. And sure enough, by the time 6:30pm rolled around, the place was packed! What a surprise, but good for the restaurant. We split the Arancini filled with diced seafood, then shared pasta with a wild boar sauce and a sweet Italian sausage pizza. The rice in the arancini was undercooked, which made it more crunchy than creamy. The entrees were good though. We ordered dessert-bread pudding and caramel budino (Italian pudding). The budino was good but the bread pudding was dry! We were both surprised about that. We had a great time catching up. Apparently SCOR is considering hiring me per diem to work in pre-admit. We'll see what happens ere too. No offers to date.

I made bread today. A recipe variation of no knead bread. The recipe came from Chuck Hughes, a NYC chef who also has a show on the Cooking Channel. This recipe had half whole wheat flour in it and was a very wet dough. It baked up nicely and made two loaves, but my favorite is still Jim Lahey's No Knead Bread. I really like the artisan type bread best.

I made a trip down to the Apple store. My computer had an issue last night and I wanted it checked out. I learned a few things about the care of a Mac computer (although not much upkeep there). They couldn't find anything wrong with it. Ok by me!

The rest of the day was spent going through my "stuff" in an effort to pare down what I own in anticipation of a move to somewhere TBD. Getting rid of things is kind of cleansing!

Amazing how time flies! I tried to catch up on sleep last night, but I am rarely able to stay in bed much past 8am (they do tell you it is better to consistently get up at the same time everyday, as well as go to bed at about the same time at night, sigh).

I spent a good portion of the day developing menus for the month I am spending on Maui. I sent the menus off to my client this afternoon for review. I did not get to the drawers and closets I wanted to to try and sort through my possessions to "thin" things out. Most of have entirely too much stuff! It's amazing what we collect over the years, lol!

One of my friends from Denver sent me an application for a chef job in Aspen. Turns out the LA based company hires out domestic help, nannies, butlers, housekeepers, personal assistants, chefs and chauffeurs. Interesting, but I don't think that is quite my cup of tea. "Yes, madam, No, sir, At once, madam, etc". Sounds like the manors in England, lol.

Tomorrow I have my interview at Carson Tahoe-wish me luck! Then dinner with a friend at Campo. It will give me an opportunity to do a restaurant review. The article I did for examiner.com on food trends for 2012, was featured nationally. Kind of cool! Maybe I should be writing more, who knows? I could be a food critic/author! Lots of options, which makes it more difficult to find the right path. It will come, though.

Janell and I are back in Reno. We took my mom down to LA as she will be staying with my sister for the next few months (kind of a snowbird). The weather was gorgeous, no snow (unfortunately no snow even in the Mammoth area), and smooth sailing on the drive to and from LA. I did do four meals for the freezer for my sister and her family, so I hope they like them. Otherwise, we did a little shopping, watched a movie, went out for dinner once and out to lunch once. But it's good to be home!

All in all, a quiet couple of days. I have been working online, wrote an article for examiner.com, looking for work, took down the Christmas decorations (I did NOT want to face that job after I got back from LA), mailed a package, ran some errands, had lunch with Ric Wednesday (Ric has called me twice and both times I was out of town!) at Arlington Gardens, paid bills, went to the bank, cleaned two bathrooms, vacuumed the downstairs, answered an email from "Hireachef.com"-a woman wanting to know how much a private chef costs in Reno, and took a friend to the airport at 5:15am this morning. No wonder I'm tired!

I have not had any culinary work for over a week but must admit I have not pursued anything (other than SCOR to check when their next meetings and marketing are going to take place). I return to Maui January 22 for a month, so won't be available really, until after I come back February 21. I do have a job interview next week for a nursing position. I need to build up a savings again. It would be part time so I could still do all my usual culinary work (plus more, I hope!). We'll see....

I've been looking online and reading to see what the food trends are for 2012. According to Inc.com, the best industries for starting a business right now are in candy, iPhone apps, education, alternative energy and technology. Interesting combinations, lol. They claim candy is recession proof. Maybe I need to start making candy! Janell thought I should start with Fleur de Sel Caramels, lol. As I said earlier, it's time to make a living, not just make money. Still looking for my exact niche.

Other than lunch with my sister and mom, Monday was uneventful. It was technically the New Year's holiday so everything but retail vendors were closed. We had lunch at Chili's (dessert was the best part, lol, a warm red velvet Bundt cake with warm cream cheese frosting topped with chocolate and ice cream), then went to Barnes and Nobles for a look around. I found a cookbook from the San Francisco bakery called Miette, the name of the book being the same as the name of the bakery. Beautiful book, beautiful pictures and great looking recipes.

For dinner Monday, I tried a pasta dish I had made for one of my clients, with tomatoes and basil and mozzarella cheese. I added sausage, however, as an extra protein boost. Turned out well, Jordan was pleased. We still had some cheesecake left over, so had a piece of that for dessert.

Tuesday I did some banking, called the BBB, looked at cookie recipes (I was in the mood to bake) and went grocery shopping. My mom and Janell came over for dinner. I was finally able to use the beef shanks I received from the woman we bought our beef from for the farm to table diner in September. I decided to make Osso Bucco. After lunch I baked a Blackberry Cobbler, then mixed up cookie dough for Hazelnut Chocolate Chip Cookies. I had to wait to bake them as I did not have any chocolate chips-I almost always have chocolate chips! Janell brought some over when she came. I started the Osso Bucco-it takes several hours. You sear the meat in olive oil and butter, remove them from the pan, toss in some diced onions, carrots, garlic and celery, add two bay leaves, deglaze the pan with Marsala wine, but the meat back in the pan, add chicken broth and tomatoes and let it bubble away for two hours. I served it with Saffron Rissoto and Brussels Sprouts with Pancetta. It turned out well! Everyone seemed pleased. The only one who did not like the dessert (Blackberry Cobbler) was Jordan. He thought it was too sweet. I always listen to everyone's complaints/compliments. After dinner we watched the results of the Iowa caucus. Interesting listening....

Friday we take my mom down to LA. Hope the weather holds out!

2012! Happy New Year! One of my goals this year is to not just make money, but to earn a living as a chef. I just need to figure out exactly how to do that. Lots to think about in the coming days.

It was a lazy day today. Slept in late, had breakfast at Hobey's, picked up Ah Choo from Janell's house, read some and watched a couple cooking shows I had taped. Tomorrow I'll do some work.

Saturday morning was sunny but windy in Denver. Kind of nice to be off the mountain and back in civilization as it were. Breakfast was a Cherry "Braid", a frozen rope of puff pastry she bought from one of her friends, whose child was seeking them as a fundraiser. Not bad, really. And of course, Kim and Dave and I spent a lot of time talking about life, professional goals, moving to Denver, going into business together. Kim has turned out to be a great friend.

We had lunch at Clark & Co on 17th Avenue (17th is kind of restaurant row). Burgers, sandwiches and brunch on the weekends. I ordered a Monte Cristo sandwich, which I haven't had in years. It's essentially French toast filled with ham and cheese that is fried, then served with strawberry jam. Yum! Kim had California Eggs Benedict (avocado and tomato added to classic Eggs Benedict). Then Kim dropped me off at the airport.

The flight from Denver to Las Vegas was uneventful and I met up with Jordan in Vegas and we flew back to Reno. He surprised me with dinner reservations at Zozo's restaurant. We haven't been in a while for a variety of reasons, but Jordan thought we'd go tonight for their special New Year's Eve menu. We came home, changed, then went out to dinner. And how disappointing it was. The first course was a choice of Shrimp Cocktail or an antipasti plate. Only the plate turned out to be a bowl filled with vinaigrette drenched lettuce, cubed cheddar cheese, cubed salami, peppericini and olives. Not what we were expecting. The next course was soup or salad. We both ordered the Pear, Walnut Salad with Taspberry Vinaigrette. The pears were canned, although that in itself wasn't so bad, but that plus a really sweet raspberry vinaigrette was too much. When the entrees came, the food was cold. I couldn't eat mine and Jordan ate only a small amount. The dessert of strawberry tiramisu was surprisingly tasteless. Jordan said something to the waitress and we ended up not being charged for dinner. Jordan left a big tip for our waitress and we left.

We ended up going to Charlie Palmer's at the Grand Sierra and had wine and appetizers at the bar. We danced a little and hung out until midnight, then came home.
