Easy Peanut Butter Cookies (and they're gluten free!)


Yields: 1-2 dozen cookies depending on size

Ingredients:

1 cup chunky peanut butter
3/4 cup of granulated sugar
1 large egg

Method:

1. Preheat your oven to 350 degrees Fahrenheit.
2. Mix all ingredients together in a medium sized bowl.
3. Using either a small cookie scoop or two teaspoons, drop the batter on a parchement lined cookie sheet 2 inches apart. These cookies do not spread much. Using a fork dipped in granulated sugar, use the tines of the fork to make cross-like indentations on top of the cookies. This will flatten them out some as well as keep them from looking like blobs when they come out of the oven.
4. Bake them for 12-15 minutes or until lightly browned around the edges.
5. Let the cookies cool several minutes on the cookie sheet when they come out of the oven, then place them on a wire rack to cool the rest of the way.
6. Eat and enjoy!

**These cookies are gluten-free.

**For a tasty variation, you can add 3/4 cup of toffee chucks (these can be found in the baking section of your local supermarket) when you mix the rest of the ingredients.
